Roll Out Cookies With Fondant

AHi everyone! i have an order for 100 pcs of kimmidoll cookies 2 sundays from now. Ill use fondant for the design/decor. Apart from that, I have to make some other cake orders as well. So I really would like to start making the cookies early next week. Here's my plan: Bake and freeze the cookies on Tuesday. Cut out the fondant decor the following day. Ill keep the fondant cut outs in an air tight container to prevent them from drying up. Assemble and pack everything on Friday. Is my timeline okay? Your suggestions are most welcomed. And also, how long does fondant last if kept at room temp? I make fondant from scratch. Thanks in advance! :)

AI wouldn't bother freezing them if they are to be delivered the same week. You could get ahead and freeze the unbaked cookie cut outs though and bake from frozen. Fondant cut outs will be fine if kept airtight at all times. It lasts for a very long time, it's mostly sugar usually, and only needs throwing out if it's gone hard and therefore useless. You could start the whole process tomorrow if you wanted, the cookies will be fine frozen until next week, and the fondant too.
