AI hope someone can help me with this... I'm making a good friend of mine a cake and she is in love with pecans, all I can find in google is pecan pie.
I went to hobby lobby and just couldn't find pecan extract...
Anyways.. I was thinking about toasting the pecans in the oven but I'm wondering what else can I add to the wasc recipe to enhance the pecan flavor??

AYou might google butter pecan cake and see what turns up. We bake those around the holiday time. It doesn't have pecan extract but ground pecans. I grind them in the food processer add them to a yellow butter cake and some brown sugar. But I am sure you will find a recipe on the internet.
The three little blackbirds blog has a recipe for a butter pecan cake that I haven't made but have taken down the recipe because it looks delicious! They make buttered pecans for the cake - this may be something you could use- check out their blog.

You can use a Fr Van cake mix and add 1/3 cup of ground nuts. I did this for yrs when I could no longer buy Butter Pecan mixes. BTW: I found adding more than 1/3 cup really didn't improve the flavor. You could also add some butter flavoring - maybe about a teaspoon?
Just went out to threelittleblackbirds to look at everything but, their domain expired on 8/31 and it is no longer there. sigh

AThank you for your responses. So I followed your advise and added 1/3 cup toasted ground pecans and instead of the cup of regular sugar, I added 1/2 cup of brown sugar and 1/2 C regular & added 2 tbs of butter flavor.... it tasted good but it definitely didn't have that intense pecan flavor I was aiming for (Maybe too much butter flavor).
so now maybe I can enhance the flavor with a nice pecan filling.

Sounds like an interesting combination.. do the dates overpower the pecan flavor?
Ano does not overpower -- it makes the flavor -- sweetens the deal-- kid you not -- if you want an excellent butter pecan flavor -- and they need to be floured in order to be minced because they are so sticky -- butter pecan was a best seller of mine and a family favorite
