I'm doing a tier like this one next week:
I have a mould for the pearls that I've used before.
But anyone who's done one like this - any other time-saving tips? I assume you start at the bottom - anything else?
AI have never done this exact design, but I have done large groupings of pearls before. The fastest and easiest way I could find was to make fondant strips much like a thick ribbon on the table. I would attach my pearl design to the fondant ribbon and then piece it on the cake in chunks. This way I was not working against gravity while sorting/arranging the pearls. Regardless if this helps or not, please attach a picture of the cake when you finish! Good luck.
Awhat i would do is measure both ways with one strand to give me an idea of how many lengths I'm going to need -- and get a nice plastic bag/container* to hold them in -- keeping it closed in between making them -- i probably would place them in the bag curved, not straight -- and make most if not all of them at once -- per tier - because you'll get a nice rhythm going -- you don't want to stop and start making nor when you're applying them -- you'll save time too --
Be sure the first ones are not drying out too much -- keep them protected -- I would use super pearl in the mold rather than cornstarch -- then just touch up after --
*if you have press & seal type plastic wrap you could make a cocoon of it on the table top or sheet pan and slide 'em in and seal off sections as you go --
i would also use a mixture of modeling chocolate and fondant -- pretty pretty cake -- yes like chefjen said would love to see a picture -- best to you
Never done it, but I wonder if you could roll out/extrude a length of fondant and open the pearl mold right up, and press it ON to the rope, rather than putting it IN the mold. I mean, you don't need the backs to be round, they could be flat. I think you would save time doing that because for me, one of the hardest things is getting the entire, rounded, pearl string out of the mold without them splitting into a couple or few pieces.
AIt's just strips of pearls, straight out of a pearl mold. If you don't already have one, get the kind that are flat on the back, that will make it a lot easier to attach. No, there aren't any shortcuts.
