Hi.  I'm making a bridal shower cake for this weekend.  The bride wants the frosting to be a cream cheese based frosting.   I've heard that Kathy's Cream Cheese Frosting is one of the best.  My question is can I substitute the Crisco with hi ratio shortening? There is 1/2 cup Crisco and 1 cup butter.  I've read on CC some of the experts say that it's not an even ratio 1:1.  Is it safer to just use the Crisco?  I really need to impress this bride.  This cake will determine if I get the job for the wedding cake.

Thank you!
Christina

ANever heard of read it wasn't a 1:1 ratio, so I'll have to look at that. When I used that kind of buttercream I used a 1:1 ratio and it didn't have any problems at all

JanH said the following back in a post in 2009....

"When I initially switched from Crisco to Sweetex, I tried subbing at 1:1 ratio. While the resulting recipe was not "greasy" at all, the general consensus was that the frosting was too rich (had too much fat) and was like trying to chug heavy cream (when you were expecting whole milk)."

So, I'm wondering, is this a general consensus?  Has anyone had good results??  Does it make that big of a difference?

Thanks!

Christina
