AThat's going to be tough unless you're a great sculptor! Modelling choc is prob best medium.
I'm trying not to think about how creepy that's going to be to cut....
AI'd recommend you go with a fairly dense recipe, roughly carve the shape then ganache and let firm up. then you can refine the shape with extra ganache/light carving. Next you should maybe chill then cover with modelling choc which is more forgiving than fondant with remodling features. after that you can go for shading and fondant/hand painting details.
What's the design? sounds fun :) unless you're great at portraits I'd avoid making it look like someone specific as faces are very very difficult to reproduce well, but do work from a picture so you can measure exactly where the eyes nose and mouth need to be.
We see faces so aften that being slightly out in some subtle way will be glaringly obvious... just google 'portraits' and you'll see what I mean- make sure you are confident before you agree- I would personally turn it down if it were me to be honest
AI've even thought about using the wilton 3d skull pan then building up the face features with modeling chocolate...I like to challenge myself is why I said yes. But will have a plan B just in case it is a disaster!
I think it would be a fabulous idea to start with the skull! If you are doing a specific person- get a front and a profile if possible. Blow it up to the size you will make your final cake. Do a thick icing coat on your cake- then let it crust. Then put the picture on it and trace the main features- this will give you the placing. Cut out the profile and line it up so you know how to make the nose profile... Make the nose and eyebrow ridge- mold it on the picture first so you have the size and placing exact- then put it on your cake and press it in a little- fill in the seams with icing and let it crust- then smooth it with viva to make the seams go away. There are several ways to do eyes- figure out what works best with your skill. It also depends on if you are covering the whole thing in fondant or just leaving it bc. I think it would be fun to do~ good luck at it!
AI ended up using 8 inch rounds and taking a side profile shot and front shot to sculpt... The man has white hair so I used white fondant but know need to give it depth and tone... Any suggestions oh wise ones????
Chya
AYou can use your fondant tools to make defining lines for the hair then use a light gray petal dust to add depth to them. You have to post pictures of how this turns out sounds so cool!

AHe looks great, but I'm completely creeped out by the thought that someone is going to stick a knife into his skull and slice him up,,..
You did a great job. The pic and the cake look similar indeed. It will definitely turn out weird when they start cutting the cake though. That would be awkward.
