I consider this a business decision. For a bakery with low volume there's no point in purchasing expensive equipment (even if it does a great job.) So it's a practical decision based on volume.

Ai would never buy one-- but i love to watch them -- but just let my mind wander a bit thinking about changing out the hopper, maintenance, and cleaning kills it for me though -- you gotta get your layers just right unless it adjusts automatically with a laser beam or something --

and like mimi said, you would have to be pumping out a boatload of cakes to ever make that a success-- and have the patience of all the heavenly entities combined to withstand the maintenance -- have to have a couple of 'em in case one breaks down

great technology though be good for a very large company like Pepperidge farm or something

AI did some research on (the cheapest)cookie depositers -- the Great American cookie stores in my area get their cookie dough as one giant blob -- but The Cookie Store gets theirs pre-portioned ---

so those depositors appear a little finicky -- smooth batters no problem-o but toss in some oats or chocolate chips and it's a game changer

then the worker bees at GACS are using/burning up their arms portioning all that cookie dough -- some of the ones here don't even sell day olds they toss the out of dates in the trash --

anyhow my fil and my bro worked fixing equipment for wonder bread and krispie kreme -- I love bakery equipment

rambling a little :)

That says it all !  Love it, and love to watch it making cakes.

too expensive, too much upkeep, expensive to repair, a pain to clean. Fun to watch though.

This is factory equipment.

ACouple years ago I was looking for some bakery equipment from Bakon Co. I asked them about this machine and they told me it will be good investment if I will do about 100 cakes a day. And this machine has to pay off it self in one year.

Athis is abit off topic but still in the nature of great baking equipment -- i just last night was blessed with a kitchen aid! our wonderful neighbor is moving, down sizing big time so he gave it to me, the sweetie -- so I added it to my fleet lol

just plain fun :)

Products like this make me sad - call me sentimental but the world is becoming so mechanical (like the self serve checkouts popping up everywhere that I refuse to use), not only do machines like these take peoples jobs so that a consumer can buy a dirt cheap product but I like to know that someone put a little love and thought into a product when I buy it.

AWell it's certainly not equipment intended for small custom operations, but if I had a bakery with walkin items to keep stocked, and had a gazillion dollars to blow, sure.
