AI need some recipe ideas for a healthy easy first bday cake/ smash cake. Also if anyone has used healthier things for frosting like beets to color etc..

AIndulge a little for the celebration. Regular cake/buttercream and practice portion control. Go all out "healthy" on the rest of your spread. OliveNation, Williams Sonoma, fancyFlours, King Arthur Flour I have all seen have natural food colorings one time or another. If you use natural items like fruit/veggies/bugs for colorings, reduce the liquids ALOT to not adversely effect your recipes. Especially if bright day glo or primary colors are your scheme? There are plenty of carb free/fat free/ sugar free items out there. I am sure they are delicious to the individuals who don't mind the engineered food.

AI went with regular buttercream, and store bought mix, well we ended up in the er due to an acute allergic reaction. So never again will I use food coloring or store bought. Until we know for sure what the reaction was from. Poor thing it was a scarry way to end a phot shoot. So I think her first bday cake will be watermelon thinly sliced and stacked in cup cake molds with cute cupcake liners. The dr said keep her on all natural for a while,

Search for Watermelon cakes. There is one where they dressed up a watermelon to look like a cake.

http://www.isavea2z.com/no-bake-watermelon-cake-recipe/ You could use homemade icing or even whipped cream on it. You can dye with beet juice, however it won't be as dark as you think, but it still stains! ha ha. Good luck, allergies stink :(

 

P.S. some people on here use a whole vanilla bean instead of extract so that maybe an option as well.

Since I bake from scratch with all natural ingredients and without preservatives or artificial colors/flavors, a parent could choose most of my cake offerings.  I do offer colored frosting, but use all natural colorings made from either fruits or veggies.  I do not make them I purchase them from spots like Maggie's Naturals and others.   Parents seem to opt into a vanilla cake most of the time.  They select to have the frosting colored or the cake (or both)  and it makes the cakes POP for those first bday pics that are so popular right now.  I think parents opt for vanilla because they avoid chocolate for the little ones (but a picture with a chocolate smeared face is awfully cute).

A@singerssoul, how's the food color of Maggie's? Do you need to add more to get the same color like the regular gel paste?

They are liquid rather than gel, but they work ok.  They are not bright as the artificial stuff but workable.  There is a brand new company that I am getting ready to order from. They offer AMAZING natural colors including metallics and sheen in a powder form that must be reconstituted.  It is trucolor and their stuff is mind boggling, especially since it is all natural. If they can keep up, their products are going to give the artificial color and preservatives stuff a run for its money!  Hopefully next month I can show some pictures with the first cake I use them.

How awful. I am sorry for them! But I am confused. Was this the 1st time baby was exposed to these foods?

Although it's absolutely possible that the reaction could have been from food coloring, it's more likely that it was one of the more common allergens like milk, eggs, soy, etc etc.  If you share what typical cake ingredients she eats on a regular basis and is okay with, we might be able to make more suggestions.  Watermelon sounds like a great option.  If she's okay with milk, maybe you could do some sort of layered effect with a dairy based "frosting," or go all out and do one of the watermelon cakes that has been all over pinterest.

AGoogle for a list of common allergens. Pretty much everything in cake is a more likely culprit than the colorings. Wheat, eggs, and dairy are three of the most likely culprits.

That's not to say I would use artificial colors for an infant, just that I wouldn't consider it "safe" because it doesn't have them.

All of my kids have had unfrosted carrot cake for their first birthdays. No dairy and eggs, carrot, and wheat were all introduced individually first.

AThanks for the great ideas. She will get watermelon for her actual bday party. She does not eat sweets. So she never had cake or frosting. And I am sure it was not real strawberries in the pillsbury mix. She has never eaten eggs, she has had wheat before. The dr gave us an epi pen for next time. Until we learn her triggers. I normally feed her organics so does her mom. I think we will keep it that way. I will try beet juice to make a pink frosting for her watermelon.

AWow. Original request was suggestion for healthy cake option. And it's for the child's first exposure. I would have given different advice had it been stated. And you went with pillsbury strawberry mix. Sorry to hear this happened. Best of luck to her.

AI honestly did not think she would eat it. I figured she would play in it maybe.. She really does not like anything on her hands. I was just going to do styrofoam and cover it in frosting. The only reply I had gotten was just give her a non organic cake. Even though I knew better I started thinking well she won't really eat it. She loves strawberries so I did that just incase she tasted it. I figured one bite would not hurt!! WRONG!! Folks now my response is. one bite can hurt and go with your gut instinct !! If I had done organic I probably would have used eggs too unless I had found an eggless recipe too. So no cakes here till we figure it all out. Thanks for the other recipes and positive response.
