Hi everyone; I was just wondering; if anyone could please share some of their recipes for appropriate fillings to go with macarons please. I have finally been able to make some macarons (just the normal French Macarons and not the more complex recipes) and they taste lovely. Now just looking for a filling (or fillings) which I can put in the middle to sandwich the shells together. And also; does anyone know any recipes that are 'light / white' in colour. I know dark/milk chocolate ganache is a popular macaron filling choice; but I'll also like some light colour fillings to go with the colour of the macarons I made. Any help would be greatly appreciated and thanks a lot in advance everyone.
You can fill them with a white chocolate ganache or with flavored buttercream for light fillings
And curds and jams are fantastic fillings too. You can pack a lot of flavour into fruit-based fillings, and the tartness can offset the sweetness of the shells.

Have mercy. There are TONS of possible options. Ganache (white, dark, milk chocolate), buttercream, fruit curds, jams, nut cremes (use nut pastes and fold it into your buttercream), straight Nutella, herb and flower-infused buttercreams and ganaches, etc.
