AHi, I usually use the wilton recipe for buttercream but find it too sweet. So last night i tried buttercream dream and was very happy with the taste but it had so many air bubbles thati couldn't get the cake to look smooth. How do I make this buttercream without air bubbles? Or can someone suggest another recipe? I'm in Australia btw :) thanks
And p.s. Thank u everyone who shares their ideas and knowledge I have learned so much from u all :)
Did you try stirring it gently but thoroughly, or try "paddling" it against the side of the mixer bowl with a spatula to get the air out?
Use a wire whip and slowly hand stir it in a figure 8.
If it's a full recipe (2#of sugar) then stir it in a KitchenAid mixer using the paddle on the lowest setting for 5 to 10 minutes. Yes, the longer and slower mixed the better :)
Here's a great recipe to try: http://cakecentral.com/a/2-icing
Do you have access to a tradition two beater stand type mixer? I make all my icing in a large 20 quart mixer, but as I need a portion to use, I remix it on low speed in a traditional two beater stand mixer....it will smooth out your icing so that it's as smooth as silk!
