How Long Should I Leave Dirty Iced Cake In Fridge Before Decorating

AHey peeps!just wondering how long I have to keep dirty iced cakes in fridge until I can throw on my fondant , I usually leave them over night and decorate in the morning but would like to save some time and just so it all at once.Also these cakes have whipped cream filling and some strawberry fill..help :) Tia!

I leave my cakes in the fridge until the buttercream is nice and solid, ~ 30 min ! :)

Crumb coated/dirty iced cakes do NOT need to  go in the frig.

They should dry to the touch within 1-5 minutes at room temp.  As soon as you can lightly touch a finger to it and not pull away icing it is ready to be finish coated.  For even faster drying melt your b'cream icing in the MicroWave for 5-10 seconds and very quickly spread it all over the cake.  I prefer to work in very small batched of melted icing - no more than about 1/4 cup at a time.  Any leftover melted icing should be disposed of - *never* add it back into your finish coat batch. 

When one works on say 4 tiers of a wedding cake by the time you finish the 4th one, the 1st should be dry and ready to finish.   Can you imagine a busy bakery - who maybe does 4 or 6 wedding cakes a day - having to chill cakes for 30 minutes or longer?  They would never get done.

BTW: b'cream under fondant should be more than a crumb coat.  It should be almost, if not exactly, the same as your finished b'cream cake would be - then you immediately add the fondant.  You do *not* want the b'cream to dry.  It needs to be 'wet' for the fondant to stick to it.
