How To Store Fondant Covered Cakes

Hi all,

I need to make a cake 6 days ahead of an event for a friend since I will be out of town the week of the event. The cake will be crumb-coated with butter cream ( no milk) and then covered with marshmallow fondant. Can she leave the cake in a card board box in a cool dark place or does it need to be refrigerated? I have left fondant covered cakes on counter top in card board box for no longer than 2-3 days. So not sure how to do it

I had to leave a fondant covered cake in the refrigerator for a week once when my granddaughter's birthday was postponed due to a snow storm but in the summer, leaving it out is dangerous no matter how "cool" her spot is.

Thanks Denise! I will probably ask her to do the same and will tell her to take the cake out couple of hrs ahead of the event. I am assuming since it will be covered in buttercream and fondant the refrigeration will not dry the cake out

I always thought putting a cake in the fridge for extended periods of time dried it out.  Is this not correct?  If not, then after the cake is removed from the fridge, how long should one wait before serving?

@ lovelaced you are correct refrigeration dried out the cake. Called  a local bakery to find out whats the safest bet. Was told to leave the iced and fondant covered cake in cardboard box in cool dark place. They said they have done it before and the cake was fine after a week. Will try it since I have no other option

AWhat about freezing it? I have that situation coming up in August and that's what I'm going to do:grin:

I froze a fondant covered cake last month for a week. I wrapped it in plastic and foil. Then thawed it in the refrigerator for 36 hours. When I unwrapped it there was no damage at all. My daughter told me it was like fresh made. Everyone loved it.
