AI have a bride that wants a 6 or 7 tier cake - all tiers finished in SMBC. However, only the top 4 tiers are real and then the bottom 2 or 3 are display (but covered in SMBC as well).
I feel that the display cakes will be a pain to cover in SMBC but how else will they match if done with shortening or other BC, not just because of color but sheen/texture. Suggestions?
Also, ideas on pricing said dummies? Decor is minimal and I am charging $4/ serving for the top 4 tiers (100 servings). before I sticker-shock this bride (her cake budget is $500) i would love to bounce this off you folks. I'd like to add this cake to my portfolio but already have given away several "charity" cakes...

idk i'd do the the 12, 10, 8 out of cake and the 14, 6 & 4 in foam--maybe do the 4" in cake if they are keeping an anniversary cake-- the 12, 10, and 8 give you just over 100 servings--
nothing wrong with giving a portfolio discount so you can get a nice picture for yourself--i'd charge her cost for the dummies and x amount for the icing--but i'd write it up like i was charging for all servings then show the pd on the order blank/invoice whatever you use--
but the only big deal about dummies is having them not slide when you ice them-- slip a slender flat head nail through the center point of a cardboard and affix the cardboard onto your turntable nail head down (so it's pointing up of course) then jam the dummy down onto that--easy peasy-- you got this--but yeah you gotta use the same icing--
if it gets into the 7th tier you really should tack on something for labor-- fifteen, twenny (sic) bucks

AI usually charge 20% less for a dummy. It depends on the design anyways.. Check the price of the dummies, how much icing you are going to use e your time..
