Baking, Crumb Coat In Advance? Fridge?

AHello all. Ok so I have to make a two tiered cake for Sunday. I usually do everything in a day but it's exhausting plus I hear letting the cake settle a day before fondant is a good idea. Here are my questions: 1) I'm thinking of making the cake as well as crumb coating it Friday, adding fondant and decorations on sat so that it's ready to go on Sunday. Can I bake it and crumb coat it as well as having the buttercream as the filling on Friday? Should I leave it out or stick it in the fridge? Is that to long to stay out since it will get fondant a day later but not be eaten till two days later?

Also, how much ( in inches I guess) buttercream do u put on the cake under the fondant, to much and it starts to bulge out of the sides but when I've made cakes in the past I don't feel like there is enough Icing to cake ratio. Do u crumb, let it crust and add more??

And lastly how many layers do you make? My pans are 2 in and I usually do two layers pier tier but I'm thinking I should cut it thinner and do two or three?
