    I need some soft, somewhat light frosting for a fondant covered wedding cake. It shouldn't be stiff when it's in the fridge like buttercream. I have made buttercream several times but people find it very stiff and high in sugar. Am I doing something wrong?

 

   Do you know any icing types that are not stiff as buttercream, and that I can cover with fondant? Thanks! :)
