How Do I Store My Royal Icing Sunflowers For My Cupcakes?

I made sunflower cupcakes with a "Sunflower" made of Royal Icing.  The middle of the sunflower is a mini oreo.  I am making the cupcakes a week in advance and the sunflowers also.  How should I store the sunflower. My concern is the oreo, How will it hold up in a week, frozen or not.

 

1. Should I store the sunflower in an airtight container or Freeze it?

 

2. Also, should I always keep my cupcakes in the refrigerator?  I notice they get a little hard from the cold.

    If I take them out of the refrigerator, will they soften up?

 

I'm new at baking and love it.  I need all the information I can get.

ANo. You dont need to store the royal icing sunflower in the fridge just let it dry outside.

Yeah you can! Putting it inside the ref is not a problem. Dont worry once you take it out just wait for 1 hour or more to make it soft again.

Hi Lindalsc!  Here are responses to your queries:

 

1)  Don't freeze or refrigerate any sugar flowers as the moisture will destroy them.  Keep them in an airtight container.   My recommendation is to attach the oreo to your flower with a little bit of royal icing on the morning of putting it all together.  They will fix to the flower rather quickly and will stay fresh.

 

2)  If you are making the cupcakes a week in advance, place them in the freezer rather than the fridge to ensure freshness with layers of baking paper in between so they don't stick to each other.  The night before icing, take them out of the freezer to defrost.  In the morning brush them with a light coat of sugar syrup before icing (use a 1:1 ratio of water and sugar)

AStore your flowers in a airtight container, I believe they will last up to 6 months. Definitely don't refrigerate them. The cupcakes need to be tightly wrapped up or contained as well if you choose to refrigerate or freeze them. Once they're back to room temp they should be fine. If they've been a little hard in the past it's probably because too much air got to them. Hope this helps!
