AI have a cake due on Sunday that's covered with fondant and filled with strawberries. Would it be fine if I made the cake today (Friday) and left the cake in the fridge till she picks it up Sunday morning?

I have done this.  I usually put a thin thin layer of buttercream on before the fruit layer just to help it not get soggy.

Yes, that will absolutely be fine if your fruit is fresh when put in the cake. Finish the cake and leave it in the fridge. Advice the customer to take the cake out of the fridge 30 to 60 minutes before eating it.
