Quick question, My mother is requesting a "hummingbird" cake, which usually is served with cream cheese frosting.

I hate Cream cheese frosting, The consistency, the taste, everything.

Has anyone ever flavored their meringue based buttercream with cream cheese flavoring, or is there a go to recipe for A meringue based buttercream adding real cream cheese?

The few I have found have mixed results, and a lot of posters claim it turns into a goopy mess if you add the real stuff.

Id like to practice my buttercream skills and cream cheese frosting doesn't really do much for me there in that department. Maybe its my recipe?

Any thoughts?

Nope. I wouldn't defile the perfect beauty of a meringue butter cream with "flavoring" of any kind. If it's not the real deal, it doesn't go into my cake. I just don't personally offer anything I don't like myself, so I avoid issues like that all together. Probably not very helpful, am I? Since it's for her, why don't you just do it the way it's supposed to be done, and get it over with. When I make cream cheese filling, and I only make it as a filling, I never ice with it, I just soften the cream cheese, and cut it into the SMBC with a pastry cutter. I don't whip it, I just mash it up into little chunks. Love it that way. A salty bit here and there, surrounded by sweet delicious smbc.......mmmmm. But I get it, if you hate it, you hate it!

Thanks AZ, I cant stand flavorings- they all have a disgusting after taste, and cream cheese flavoring kind of gives me the heebie geebies anyways... Ill probably end up using it as a filling, and just icing with my Meringue anyways. If I have time I might test out a Meringue with real cream cheese first..Ive actually never thought of leaving it slightly "chunky(?)", but that sounds like it might be delicious!

Oh it is sooooooo delicious that way. Especially slightly, ever so chilled.
