I'm thinking about freezing a cake for the first time so that I can make it ahead of time since I will be short on time this weekend.  I've read some of the forums about it and I'm convinced that I'm going to go ahead and do it.  I still have one question that hasn't been answered yet, though.  Should I thaw the cake before decorating it with fondant or can I go ahead and decorate it while it's frozen?  Also, I've seen half of y'all freeze while the cake is warm and half of y'all freeze after the cake has cooled.  Could you tell me what you do and why you do it so that I can determine which way I want to go with this?  Thank you in advance for your answers.  :)

I freeze all cakes that will be decorated. I bake them, level, wrap and bag and then freeze. I let them cool before wrapping and bagging. I pull the cakes out of the freezer before I start to make the buttercream and the cakes are thawed before I start frosting.   My reason for freezing is simple, the cake is much easier to work with (more stable???) and seems to be more moist.  Generally this is just an overnight freeze, bake it in the afternoon, cool and freeze. Drag it out the next day. I have however left them in the freezer for a month or more and they came out fine. I am a strictly bake for my family and friends baker.

That's exactly the kind of baker I am, too, so I've never had the need to freeze, but something came up and I need to make the cake like a week in advance.  I appreciate your response.  Thank you!!  :)

Definitely thaw before icing/decorating.  If you don't you'll discover that things won't stick the way you want them to.
