I am really keen on making a nike air force 1 cake for my cousin, but I am struggling to find any tutorials online.... All that I appear to see are images of cakes produced but never any information on how they are created.

Do I need a template? Carving?.....

Have you tried searching youtube for a video.  It's usually very helpful for me.  Give it a go.
