AI'm making a cake for my niece and thought the 10th was on Wed and its Thu! I've made sweetapolitas version of swiss meringue buttercream, filled and crumb coated the cake (it's currently in the fridge setting ). I was going to cover it in fondant and leave overnight to rest, decorate tomorrow and deliver it on Wed. As her birthday isn't until Thu will it still be ok on Thu? What should I do to keep it as fresh as poss? Should I keep it in the fridge un-fondanted (I'm inventing new words here ha ha) then cover it on Wed? Help! Thanks xx#

Yes, it would still be fine on thursday. Perhaps you could consider taking out a little butter and substituting it with shortening to increase the life of it haha! :)

Thanks so much for replying, I appreciate it. The cake has already been covered in fondant so i'll just decorate it today and deliver it a day early. I brushed on some homemade vanilla sugar syrup onto the cake so hopefully that will keep it nice and moist. I was just worried about the SMB as it's the first time I've ever used it. xx
