Deluxe Ovens, Cr2-3 Vs. Cr1\2 4

AI'm pretty sure I have myself talked into buying the CR2-3 this week,( I just received a quote) but I'm wondering if any one has the CR1\2 4, if so how many round cakes can you bake on one rack, and what size combinations fit on the racks? (Example can I fit 2, 10" rounds or a 10" and 8"). I have been researching all week, and what I have found is everyone who has the ovens really like them but I can't find much info on them.

HI, I have the 3 shelf and the 4 shelf, by Deluxe, yes, I love them!

 

I use the 4 shelf for cupcakes and the 3 for my wedding cakes.  I bake 2 or 3 wedding cakes at a time in the 3 shelf.   Yes, you can fit way more than two 10 inch pans.

 

These are good sized ovens.  I bake at a lower temperature and my cakes come out perfect. Go to the Deluxe website and you can find the dimensions.

Thanks Cindi,

 

I do a lot of 2 and 3 tier cakes and once in a while a 4 or 5 tier cake will come around.  Do you think the CR3 is going to be too big for what I do, or if I should just go with the smaller CR1/2 4" and save myself a little money?  Without seeing the ovens, I'm having a hard time visualizing the inside of the them.   My husband is pushing me to go even bigger, he's trying to get me to open my own shop, but I don't want that... I am legal by the way  :)

The DeLuxe 3 is my favorite.

I use the bottom 2 shelves for baking. but I can move the large pans (14-16) to the top, so I can reach a smaller pan that is ready to come out.  Then I put the big pan back.  That way you are not taking pans out of the oven, just moving the pans around.  I hope that makes sense.  And you get done faster.

 

I have been baking in my Deluxe 3 shelf for over 14 years.

 

I am about to open my 3rd and last cupcake bakery/wedding cake shop in a couple of weeks.  I had 2 shops, now I am back to one big shop.  I was glad, I had this oven when I have a few three tiered cakes and a 5, 6 or 7 tiered cake order.

 

I was told it is like having a guest room, you don't use very often.  But you are glad when you do need the 3rd shelf!   Take care!

I wanted a Deluxe Oven for many years.  When I built a commercial kitchen I chose these and have had two for the last four years. (I have a kosher bakery and need one oven for items containing dairy and one for items that do not)  I have to say my home ovens cook much better than these do.  I have the 3 -shelf ovens.  Don't have the model number handy.

 

When I first got the ovens they would not hold a temperature, running way above what they were set for.  Deluxe sent me new thermostats which did not help, so they sent new thermocouples.  That didn't help much either.  There are no service people and no service manual, so it is all do-it-yourself.  The best they could advise was to bend the thermocouples down--very low tech...

 

I actually don't find that the baking is extremely even, as is advertised.  There are always warmer spots and cooler spots.    I used to always keep two thermometers in the oven and the top was always warmer than the middle.  (Not surprising since heat rises, but they do advertise even heat.)  Just recently I only have one in each oven and the last calibration seems to be lasting longer than previous attempts.

 

If you want to bake things other than cakes,this is not the best oven because the top heat will overcook things like meringue and macarons.  

 

The very perfunctory instruction manual says to load the oven from the top down but both the colleague who shares my kitchen and I prefer the middle shelf.  The bottom is good for things that need a little extra bottom heat.   Though you can fill the ovens and bake using all three shelves you need to watch carefully and probably take things out at different times--even if they are not different sizes.

 

I finally disabled the top element in one oven so I can bake macarons on that shelf.  The oven has actually behaved a bit better generally since then.

Oh no... now you have me worried.  The oven should be here within a couple weeks, so I guess I'm going to find out.  Thank-you for your comments.  By the way I did go with the CR 4.
