Hi everybody!

my buttercream looks fine when i make it, it tastes great too! but when I add red or black food color, it looks weird! all lumpy and loose color on the way! Can you see from the pic? horrible :( Even piping, it has bubble of air!

That's the recipe I use:

1 cup butter t room

pinch of salt

vanilla extract

3 cups of powder sugar

2T of whipping cream

Please help!

AAre you using liquid, gel, or powder coloring? Are you coloring the red and black from fresh (white), or another color?

I use AmeriColor, but it happens only with red and black. With pink, for example it works fine!

Color from fresh!

Do you think it might be the quantity of food color?

I think it's the AmeriColor. I had the same with a cake 2 weeks ago, had to pipe grass with buttercream. Buttercream was fine, until I added the Electric Green ... it went all "wet" and lumpy.

So - no more AmeriColor in my buttercream ... shame though, I like the Electric Green ... it's so vibrant
