Ok I just posted pics of a cake I did this weekend. I was pretty happy with it except.. its to tall. This is a problem I am continuing to have. I bake in 2" pans and level to that height. I put a buttercream dam around it for filling, and I end up with a cake that is 5 inches tall! What am I doing wrong
Do you stack two cakes on top of each other or do you cut the cakes in half?
My layer of filling is about a 1/2 inch thick. So I'm confused.
First off I think your cakes are GREAT, and you could try using less batter in your pans. Hopefully someone else has a better solution
It's not wrong, but if you don't want the cake so tall I'd just cut one cake in half and do it that way.
It doesn't sound like you are doing anything wrong. Two 2" cakes, a 1/2" filling, the board, and 1/4 -1/2" of icing all around, comes to almost 5". My cakes are usually about 4 1/2" tall. I don't see a problem. Did you want a smaller cake? Seems like your doing everything right.
If the height is a real problem for you, you could bake and torte a 3" layer. I did one for the first time this weekend and was struck by how tall it looked. Guess that's part of being a newbie decorator, at least for me.
I love tall cakes...They look very professional ..I make mine as tall as I can.. more room for decoration. don't worry, what matters is your workmanship..the way you decorate and assemble. Cheap cakes look very short..you don't want that !!!
I don't know what you're doing, except maybe using A LOT of filling, but I wouldn't worry about it at all. Most usually end up 4 1/2 inches iced & filled.
I'd be thrilled to have them 5" finished. I like taller cakes. I especially like doing 3 2" layers.

OK I like the looks of them but how do you cut and serve them? Is it a piece of cake 1 1/2 x 2 x5 tall?
Just slice them thin, that's all!! It's easy to worry, but you have nothing to worry about....you do great work.
