AHi all I'm looking for a low calorie sponge recipe and as butter contributes the most calories I was hoping to find a butterless recipe. I don't want to use oil as this has just as much calories. Do you have any recipes for me :)

I was thinking to add coconut cream or milk??

Try an Angel Food Cake... 

 

Its mostly just egg whites and sugar... 

 

It is dairy free... butter free... and depending on the type of flour you use, gluten free possibly...

Simple Sponge 
4 eggs 
150g caster sugar
1 ts Flavour or extract
50g Corn starch     
50 g Plain flour     
50 g Self-raising flour    
pinch salt
Preheat oven to 180°C. 
Line 2x 20cm sandwich pans. 
Sift dry ingredients 3 times. 
Beat eggs with sugar for 8 mins until thick, pale and tripled in volume.. 
The mix will fall back into the bowl in slow ribbons. 
Beat in any extracts. 
Sift flour mixture over egg mixture while folding in with a large metal spoon until just combined. Divide mixture between tins. To level batter, gently spin tins on kitchen counter. Bake for 20 minutes until cakes spring back when gently touched. 
Remove to stand 2-3 minutes. Turn out onto racks. Remove lining to cool.
