Making cupcakes for a Bridal Shower tomorrow - need frosting/assembly advice!

I've been planning for a few weeks and I'm making 60 cupcakes today for a bridal shower that is at 2:00 tomorrow. The shower is for my cousin and she lives 2 hours away... I'm going to the shower and will be at our grandmothers around 10am, and she wants to pick these up at noon....

 

I have all the decorations (fondant related ones anyway) finished... my questions are these:

 

1. Should I make the frostings (chocolate buttercream, lemon cream cheese and raspberry buttercream) tonight, store them in bowls and take them on the trip to pipe onto the cupcakes tomorrow when I arrive? If I do this, will the frostings rewhip to the right consistency to pipe? I'm doing a rose swirl on one...any advice on rewhipping? I know the frostings will come to room temperature given the 2 hour drive.

 

I thought about just taking all the ingredients with me and making the frostings once I get there, but that's 3 frostings, 3 fillings (lemon curd, raspberry filling and ganache) and assembly in 2 hours time (assuming I get on the road by 8am)....

 

Any advice? I've never made cupcakes for profit before so I'm nervous. I thought about just making all the cupcakes tonight and putting them in my containers but I'm too paranoid about the drive up and the cupcakes getting messed up....

If you have decent boxes there shouldn't be an issue transporting them.  It seems like a pain to bring all the stuff with you to fill and ice them.  Just go ahead and do it and pack them tightly in airtight containers so they don't get dried out.  Or you can go ahead and put them in boxes with a cupcake insert so they don't slide around.  Alternatively, you could use a dab of chocolate or candy melts to secure the cupcake to the bottom of the box if you don't have an insert.

would I have to refrigerate them overnight if I have fruit fillings and a cream cheese frosting?

Yes, but they should be fine if you have an airtight container.

All I have to transport are the clamshell containers for cupcakes, which I'm not sure are airtight...

Clamshell should be fine.  I will sometimes put mine in plastic grocery store bags (I use boxes) to keep too much air from getting to them.

Just a suggestion. . .You might check your local Dollar Tree store for cupcake containers.  Each container has insets for 9 cupcakes along with a high cover.  Very handy & cheap!  I had a 3-hour drive, in weather in the 80s, to deliver a 3-tier wedding cake.:( (The cake was frosted & decorated immediately before the trip.)   I turned my car's air conditioner on full blast.  The cake made it fine.  :smile:
