Please Help! Chocolate Ganache Or Buttecream For Hot Weather

Hi guys,

 

I was wondering if anybody can give me any tips. I live in Kuala Lumpur and the weather here has been scorching of late (93 degrees Fahrenheit). I usually cover all my cakes in fondant, but I just got a request from a client who absolutely hates fondant and wants a chocolate icing cake instead.

 

Does anyone have any recipes/tips on making buttecream or ganache that will sustain in hot weather? The party is indoors but I'm not sure if there is any air conditioning. I also have to stick on some fondant decor at the sides of the cake. How do I prevent them from sliding down if it gets too hot?
