Hi I'm new to this site and have a question I hope someone can answer for me..

 

I was asked to make 200 mini cupcakes for a wedding in Aug but will be need to make them a head of time. What's the earliest I can make these before they are no longer fresh...

I usually make them the day before I ice them and deliver.. but prior commitments will have me out of town 2 days before I need to have them delivered.

any suggestions would be great...

ABake and freeze. Especially with minis; they'll dry out faster than regular sized cupcakes.
