Hello,

I just wanted to say Thank you as I've been reading these forums for weeks now in preparation for my first ever cake.

I burn water.  I put lumps in it and it turns black.  The last cake I made wouldn't cook and came out of the oven with an inch of brown liquid on top.

So, with the recipes, information, advice and images on this site, I've manged to create my first two cakes (on the same day).

The mermaid cake was for my daughter.  The idea was one she chose from online searches so if this was your concept, please take it as a compliment!!  The digger cake was for a family member which I did at the last minute.

So thanks again, I wouldn't have been able to even start this without this forum.

Hello from a fellow Kiwi.

I love both of them.  Definitely wouldn't have thought they were your first two cakes.

Excellent execution on both cakes.  Especially like the mermaid.  Just for future reference, I'd add a little white buttercream to the edge of your waves, like these:

AThank you.

Love the waves in the link. I used a white glitter dust but it didn't have the effect I wanted.

I also used fondant for the decorations but have since learned that gum paste would have been a better option. I found fondant handy as I could wrap/seal all the small amounts of individual colours and put in the cupboard over night. I work long hours and am a Mum so I could only do this later at night, hence easy storage was suitable. I've heard gum paste is harder to prevent drying when storing but I may be wrong there.

I've been tasked with another cake for an elderly mans 83rd birthday in 2 months. I want to make a vegetable garden and may attempt a figurine. I might give gum paste a try.

DanaNZ - I love your mermaid cake, such a cute idea!

Gumpaste does go hard a lot quicker than fondant, but if you keep the gumpaste well wrapped in the heavy duty plastic it comes in and sealed in an air tight container it will be fine.   :)

AThanks! I really didn't want to do the barbie body and tail as I was keen to try something different. And this idea saved me having to make a torso lol. I found a similar pic online and went from there.

Great, so I can store gum paste, I'll give it a go!

Actually, I would have used fondant just as you did.  Easier to work with, longer drying time allows you to work more slowly, and the number of pieces you have would have left your cake encased in a product that you couldn't cut through.  I may try that mermaid sometime.
