Wine bottle and crate cake help

Hi all😀
I know this question has probably been asked a thousand times before but can anyone tell me with the crate for the wine bottle do you cover your cake in fondant first and then add the side panels...?and also do you use just fondant for the panels or a fondant/gumpaste mix...?

No, I've never seen it done with fondant under the panels...and you'll definitely need to use a mixture of fondant/gumpaste or tylose if you want firm wood-like boards...

The one I made was for a chocoholic so I used chocolate cake covered in chocolate ganache and then modelling chocolate for the panels. I then used chocolate curls for the sawdust400
. The bottle was RKT covered in modelling chocolate.
New to Cake Central, but have been baking from scratch and decorating for 20 years and running my business for 3 years.

I have a couple more questions...If I do the panels in fondant/gumpaste mix won't they be too hard to eat and also how far in advance can I make these panels...???
