Coconut Milk To Replace Regular Milk?

AI want to make coconut cream cupcakes for the game Saturday. Dorie Greenspan perfect party cake is my holy grail for white/vanilla based cupcakes. Can I replace the milk in the recipe with coconut milk? I hear it cooks out. Or should I use the coconut milk to make the frosting and some sort of coconut cream? I have tons of it. Thanks!

i don't know the answer--]coconut milk and coconut butter are some things i want to experiment with -- so hopefully someone will chime in with some good information--but otherwise please post your results if you learn anything good--

 

i use coconut flour and sugar regularly with great results fwiw--i use coconut oil sometimes but i prefer regular butter--but now i hear there's a coconut butter so i wanna try that too--

 

so many different ingredients to explore (code for confuse me and make me broke--hahahaha)

Thank you! Yeah it seems to be a big mystery. I'm going to try replacing the whole milk with full fat coconut milk tonight. Will let you know how it goes :-).

I am doing good but been suffering with bronchitis for about 3 weeks now. The tail end just won't go away. I'm starting to hate winter lol. How are you?

AWhen they made coconut cake on americas test kitchen, they added coconut cream, the thick sweet stuff you use to make piña coladas. Lots of coconut flavor.

A^^Thank you for the tip. The store didn't have it, but I will keep that in mind :-).

I ended up being too chicken to use the coconut milk in the cake part. I had no time to do a test batch. I used coconut extract instead & put the coconut milk in the cream cheese frosting. They came out ok but lack much coconut flavor. But usually when I eat coconut cake I taste no coconut other than the flakes on top. My testers said they were perfect though lol.

I can answer this.  I use coconut milk all the time in my Coconut Cake with great results.  I can't say if it adds coconut flavor as there is coconut in the cake itself.  I have used this cake for both stacked cakes and single tier cakes.

so sorry about the bronchitis--it' so dang persistent--don't let it jump the fence to the p word--but you're just so-o tired--it's like you're never really fully awake or something except for when you're hacking your guts up coughing--oops tmi---feel better soon!

 

me i'm the same--i fight arthritis symptoms-- go to pt when i'm not swoll up like the incredible hulk--i still think there's something else i can be doing to get rid of this rather than just treat symptoms--but on the upswing i'm treated like a princess by my prince of 35 years--dang that's a long time!

we're really lucky--we din kill each other yet :lol: hahaha

but we truly are most blessed--

sounds like a win--i have a can of coconut milk i think i'll make a savory something with--need to get some cream--my son told me to add coconut to some of chocolate offererings--now i know which kind to get

AGood morning K8 :-). Thank you for the well wishes. Yeah I'm dreading the P word like the plague. There has been a huge flu epidemic here and everyone in the area literally has it lol. That's what brought on my bronchitis. I have a follow up appt to see if it went away which it hasn't...meaning another round of yucky antibiotics.

Yikes I don't envy your arthritis at all. I've seen so many suffer through it. I hope you find some more relief! Have you tried natural remedies? That is so beautiful that you have been married so long...very rare these days. How admirable. I can't wait to find a man that will treat me like a princess lol.

No I can't argue with being told the cuppies were perfect. Maybe my half stuffed up nose is to blame ha. Make some curry with your can of cm...delicious stuff. I made the cuppies for an ICU playoff party. Yes I said that right lol. My aunt is there with kidney failure, liver failure, blood infection, and pneumonia. My uncle doesn't leave her so we are going to watch the game with him in the waiting room to cheer him up. We ordered finger sandwiches too...chips, drinks, & cuppies for the whole waiting room.

yeah at first i'm thinking icu? no not icu she means indiana culinarious university or some school i never heard of--wow that is so cool and powerful for your own family plus it will be a beautiful peaceful place for other residents and their families to find a calm and better outlook for a fleeting few--srsly beautiful--

 

hey--hospitals are petri dishes--take a bunch of zinc lozenges--or this sounds gross but so be it--put some triple antibiotic on your finger and rub it into each nostril--do not touch your face wash your like hands you're ocd---stuff your pockets with kleenex--
