Don't know what it's called..I've never seen that before, but it looks like fondant to me

Oh....I just remembered what it's called....PITA!  LOL.....just kidding....couldn't resist.  I would need lotsa lotsa money to do that cake.

To me it looks like a thick fondant circle, folded in half, and rolled into a crescent shape. A whole bunch of them. Start at the bottom, so the bottom ones support the top.

ADamnit I was hoping it wasn't fondant :( my little one doesn't like the texture

You could get a similar design using a large open star tip and piping figure 8's in a gradient.

 

Similar to what you would do for a gradient rose cake, but eights instead of circles...  And I'm using 'similar' a lot because using that technique, the crescents won't be offset and angled, like in the picture.

That's exactly what it looks like to me, too. Does not look like icing at all.

yes me too--but her question was how do you pipe it --so those are ideas on which tubes could pipe a similar design--but not the exact same look

I can't imagine how to pipe butter cream to end up with results that would match the pic. Even using a 104 tip would not be easy.

AYep, it's fondant. So the only way to get it looking just like that is to do it juuust like that. With fondant. And that's a lot of rolling and cutting too. Yikes.

So pick it off, exposing the usual layer of buttercream that's always underneath fondant anyways?

go to my cake school, it show the figure 8 pipping on cake lookes so simliar to what you want in butter cream
