Hi, I am planning to do a 3d Lightning mcqueen cake for the first time in february. I will be baking it a week before to freeze. I will bake it in two batches in a 10 inch square tin. I am planning to carve it when its half defrosted, can i put the filling in while it is still half defrosted?
Also, I will be using Ganache to fill it and to cover it. Can you please tell me what ratio chocolate to cream i need for the filling and what ratio I need to cover it as this would be firmer.
