Hi Kate, what do you serve? We don't eat turkey, so our sides are the main event. Eggplant rollatini, mashed potatoes, sweet potatoes, corn, stovetop-type stuffing, fresh made cranberry relish, fresh veggie tray, plus homemade rolls, pumpkin bread, cranberry orange bread.

hey mimi--thanks for sharing-- what is the eggplant rollatini like?

 

this year the kid & her hubby are doing the turkey & a potato dish--

 

i am making for dessert individual apple pies and small pots au chocolate--i'm kind of excited about the little chocolate pots because i always miss having a spot of chocolate on thanksgiving--i just need a touch--

 

then i'm digging into my cookbooks and doing stuff i've never tried before if i can find it at the store -- i have time for crazy stuff now y'know--

 

broccoli puree with bleu cheese-- i like both of those and we'll see how it goes together

 

braised belgian endive -- never tried it --braised in chicken stock -- can't be all bad

 

and i think i'm gonna do artichokes stuffed with mushrooms --

 

i've never made anythings like this before except the apple pie -- so well see how it goes?

AMmmmm!!!!!! Squash! I'll be trying that one!

We like to switch it up too. This year we are lightening up our menu a bit. No Paula Deen crock pot macaroni and cheese. :(

This year is roasted veg, salad, my mother-in-law's amazing potato salad my hubs can't live without, not sure what my sis is making. I may even make some butternut squash soup if I have time. I love that stuff.

not that this necessarily works for thanksgiving although i'd sure eat this anytime but this recipe for onion crisps is the best seriously--

 

i used less than one onion for 4 peeps and had a ton leftover that i had fried up--it's certainly not a complicated fried food

 

  • cut
  • soak
  • grab 
  • slosh in flour
  • fry
  • freak out whahoo

 

the leftover unfried onions i left in the soaking bag with the buttermilk--was foraging for supper 2 days later and i thought 'wonder how these would do'--i dipped 'em in fresh flour and fried 'em off--amazing! man they're good--

Those are the onion strings she piles on top of her big slabs of steak Ladd just slaughtered after raising them. haha!! YUM!!!

Yep! Short mason jars…half pint size. I think I said 4 oz. I don't know pints and ounce conversions. HAHA! Anyway…this is the tutorial/recipe I am using. Crust on bottom and top! Aren't they cute??

K8, I love pots du chocolat! I made a mocha hazelnut variation for my state fair's Ghirardelli contest a couple of years ago and won 2nd place!

 

I like to try something new every year, this year it's this:

they are cute and brilliant--both crusts--love that--oh it sets my little brain whirling too--these would make the nicest gifts too and the recipient gets to enjoy the aroma while they bake--the aromatherapy is half the fun of baked goods

i've toyed with the idea of getting a ricer...one of these days...

 

but i'm drawn to the more savoriness of this recipe--

 

on tv this chick put THREE cups of brown sugar into her sp dish--omg! i mean sp barely needs sweetening anyhow but 3 cups? <thud> i fainted--

AI don't use my ricer often, but for this dish it is worth the little extra effort.

Until we moved this year we always had a potluck thanksgiving with friends and this was the most requested side every year. I also made Parker house rolls last year, and this roasted mushroom soup.

re: mocha hazelnut pots du chocolat win--well multiplied congratulations! how awesome for you  *=D> applause

 

every time i make this one veggie casserole that calls for green chilies i think--dang i need to add to these to more stuff and your recipe is ringing that bell too--i think we all need more green chilies ;)

 

and i was surprised to see fresh corn on the cob at the store recently--where did they get that? 

 

this corn pudding looks pretty amazing-- 'corn pudding' sounds so thanksgiving too--

omg--i bought parsley root instead of parsnips for this apple parsnip soup

 

i'm playing "chopped" here with my own self  (http://www.foodnetwork.com/chopped/index.html?vty=/chopped/

 

they look like parsnips which look like white carrots--

 

and the skinny part is pithy but the fuller part is not bad so i'm gonna use it instead of parsnips--

 

however the whole point of the soup is that one of us loves parsnips--

 

but i could not find parsnips either--which is how i screwed this up in the first place

I made mine today. I halved the recipe. I actually roasted 3 medium poblano chilies and used those. I bet you're right about the typo, 14 oz seems like a LOT of chilies! If you haven't made yours yet, I would recommend using half the butter called for. I used a paper towel and sopped up a lot that was sitting on top after I took it out of the oven. I haven't tasted it yet but it smelled wonderfully!

thank you, elcee, i though it was a tad odd to pour the pudding batter into 4 tablespoons hot melted butter in the pan--

 

maybe i'll mix some of it into the batter...god forbid we don't get enough butter tomorrow ;)

 

the pie & pots & puff are done,  corn thing ready to rock, soup to make & artichokes to stuff  in the morning

so fwiw-

 

  • the formerly parsnip but actually parsley apple soup was a hit w/my daughter--it was better room temp--
  • the corn pudding was a big hit w/my husband and was better day old -- and elcee, i halved the butter and i still had to mop it up--thanks for the heads up--
  • the stuffed artichokes did not happen because the insides of the artichokes were gone by the time we peeled the pithy leaves off? got a refund for 4 at $3 each yeah huh i did -- then the mushroom stuffing was just served by itself and played well with the other kids --
  • the petits pots au chocolate was a big hit all the way around--no problem-o --
  • the spinach cheese puff got a wee bit overbaked waiting for it to fully puff--but it still is cool and the leftover works great in scrambled eggs but it's getting a bit too rich pour moi--
  • the apple pie--oh my-- a moment of silent reflection and then out of  control thunderous applause for the apple of my eye apple pie--i used coconut sugar in it--same calories as sugar but it was not such pointed sweetness--more natural--milder but still disgustingly amazing and can't wait for next year--
  • then because i thought i blew the soup i made the cheese puffs anyhow--wow those are dang good! highly recommend
