AMy mom has requested a caramel apple cake for her birthday this year. Unfortunately, I was sick on her bday so I've got to make it up to her. Does anyone have a good recipe? I thought about doing my normal vanilla cake but using apple sauce or apple juice for the liquid and a caramel filling. Any ideas or suggestions??

AHow about adding a cup of finely chopped apples to the batter.

You can substitute grated apples in a carrot cake recipe, and fill it with a thin layer of caramel.  I like my fillings thicker, but straight caramel is too much.  Or split the layers and do several thin layers of caramel.

I was wondering if that would work. My momma loves my carrot cake recipe so I'm sure she would like the apple too. I think I'll tort each layer so there is a total of 3 layers of caramel so its not overwhelming. Thanks so much!
