Where Do You Start With Design

I am thinking about my next competition and i would really like to do a wedding cake. the criterion is pretty open  

18 inch no height restriction three or more tiers.

 

although i have done a few wedding cakes i have always had a brief that has tied me down. but with free reign i reall do not know where to start. 

 

i don't do royal icing because i can no longer stand or balance well enough to make a good job of it. i was hoping to tie into a current trend but where do you look for trends in wedding cakes. 

 

the only idea i have had is celtic knotwork overlays.

 

so i was wondering if anyone was willing to share how you approach designing from scratch.

Ha!  You've hit the nail on the head.  That's why I've never entered the Cake International competition...

 

...  there's a difference between a cake maker and a cake designer.  And unfortunately, when I'm not pinned down with an idea my mind goes to mush!!!
