AAmericolor is the more popular color in the states I would say...where are you located? No matter what though, gel colorsare what's preferred among cake decorators

Yes, I like Americolor better than the Wilton gels, just because they come in a squeeze bottle instead of the screw off cap.

I like using sugarflair paste colours.  A small pot is £2-4.  DON'T use liquid colours as you won't get  strong enough colour.

I haven't tried the gel colours yet, although I was looking online today and sugarflair also do gel-paste.

AThe US americolours are not deemed food safe in Europe so there's a different version available here. I use Wilton & sugar flair & find them great

Sorry this is a bit off topic, but why aren't they food safe in Europe?  Is it a certain chemical dye or something?

With the paste colours,I add it using a cocktail stick in very small amounts at a time, and then I knead it into the sugarpaste....I usually end up with red or green hands :-D

Something to do with European regulations on food colourings.  I'm sure someone will elaborate more clearly.

So comforting knowing I use them all the time. haha! Oh well! If I haven't died from tasting cake batter by now, I don't think food coloring will hurt! 8O

AI doubt if 90% of what is in the grocery store here would be considered food safe in Europe! My favorite example is orange Fanta which is the color of orange juice in Europe, rather than the color orange it is here.

There are extensive studies about how artifical colors, flavors and preservatives are bad for you but the FDA is too concerned about upsetting big business to do anything about it here.

When there was a big push on Kraft to take the artificial color from mac and cheese, and replace it with the natural color that they put in the version they sell in the UK, a lot of people genuinely thought that Kraft should be allowed to do what they want and that it's on parents to protect their kids from this stuff. Which is right to an extent, but food manufacturers could really make a difference if they wanted to.

In my idea the paste color should be dark. Sometimes it creat different taste in food.

Sugarflair paste colours are my favourite, they are concentrated and a little goes a long way, they are also widely available in the UK and are stocked by many UK suppliers as well as on eBay.
