Hi!

I recently started using modeling chocolate and love it! Does anyone know if you can get a real white tint by adding white food coloring to the modeling chocolate?  I am using to make the white of eyes for a character cake and the basic recipe yields an off white. Thanks so much for any suggestions!

We use Titanium Dioxide to make "white" white chocolate.  We buy it in a powder form, melt white choc add the titanium and let it sit warm and liquid (on top of the turned off but still warm oven) for about 15-20 mins, the powder dissolves without affecting the consistency of the chocolate and then add glucose.  I'm in Australia so we don't use corn syrup.  Works perfectly and you can use it to see the whites of your figurines eyes!

810, how much titanium dioxide do you use to how much chocolate and glucose?  Does the titanium dioxide become un food safe if you use too much?  I ask cos I use it in my soap making.
