Anyone Have A Tried & True Recipe For A Tropical Wedding Theme?

I'm thinking pina colada, coconut, or even a fun filling that has tropical flare. Do you have a recipe that you have used and loved before? Also, the frosting needs to be white so I am thinking about going with IndyDeb's bc which is my tried and true fav but I'm wondering if you have ever tried a crusting cream cheese on a layered wedding cake?

Ok, macsmom on this site has recipes for that. I can,t think of the site. but google her name on cake central and you will see how to go to the recipes. hth

Yes Macsmom has a tropical breeze cake that I made for my birthday. There is a thread on here I hope it comes through ok. Here it is. http://cakecentral.com/t/614554/help-gourmet-flavors I only tried the tropical breeze but it was very moist and good. I have done a crusting cream cheese but not on a tiered cake. I use a cream cheese buttercream recipe I found on the internet. It holds up really well. As long as you can refrigerate  the cake, I don't know why you couldn't use cream cheese. Humidity and heat may be a factor though. If you google you will find a lot of answers.
