Hi, I'm of Indian descent and we make a dessert of baked sweetened ricotta, soaked in milk and garnished with nuts.  I'm getting married in America to an American.  So I wanted to convert my ricotta dessert into a cupcake.  Keep in mind, it has to be eggless, in accordance with my religion.  Any ricotta cake recipes out there? And what can I use instead of eggs in the recipes? silken tofu maybe.
