I am looking to make a cake with zig zag sides like this, can anyone recommend the best way of doing this?

I don't think it airbrushed. The cake in my avatar is a big chevron pattern that I did from really thinly rolled fondant so you don't see the edges of the pattern that much. Check out Jessicakes blog about transferring chevron onto a cake using waxed paper. It really helps keep everything straight without stretching the pattern when applying it to the cake.
