I never know what to call myself.  If I say "baker" that brings to mind the guy behind the scenes baking everything from pastries to donuts to cakes, and doesn't mention that I am creating art.  If I say "cake decorator" that makes people think I work at Costco with a bag of canned buttercream piping on roses.  Is "cake artist" too prissy sounding?

A"Cake lady" makes me think of a woman made out of cake. (Like a robot is a "metal man".)

Usually in response to the person in line behind me at the store who says something witty like "somebody's doing a lot of baking today!" while they look at my 10 dozen eggs and 20 pounds of butter.

I got so tired of cashiers making this comment I just started handing out my business card in response!

I go to the store the same time each week, so the cashiers know me. When someone says something like that they're usually the ones who tell them that I do cakes. What gets me is when someone looks at the pile of flour, sugar, eggs etc and says "Are you baking something? No, I just like to suck on sticks of butter and I do a lot of papier mache.

Ha ha! I would really like to give a sarcastic answer like that sometime.

I call myself a caker.  I also tell people that I cake.  They're not real words but they feel good to me.  I'm not a baker, because for decades I said I was a baker, i.e. someone who likes to bake, albeit unprofessionally but with sincere passion, lots of different things that you'd find at your local bakery (cookies, cakes, pastries, breads, etc.).  Then I found cake art and it transformed my life and I've gone from baking lots of different things to a narrow focus on cakes specifically.

Anyhow, long answer short:  I cake.  Therefore I am.

To us cakers, cake artist sounds perfectly acceptable!

To others, it may sound a little prissy and if so, they are probably not the customers you desire!

You want customers with distinguished (-ing?) taste, so appeal to that.

My friend tells people that I am a high-end cake maker!  I laugh at this but she means well.

I tell people I run a custom cake business out of my home.  Humble, but exact!

I'd respond something like the world is ending didn't you know? Or if you're not that dramatic, you could say "there's a shortage didn't you hear? you better hurry." snicker giggle.

I tell people that I "do custom cakes".   Then, when they say, "Oh!  Do you do weddings/parties/etc.", I respond, "No.  I do this as a joyful and challenging hobby".   Nearly always people are interested and enthusiastic and supportive.

Oh I get this all the time! It's usually only elderly people that say something though and they are just so darn cute anyway. But I have always wanted to say "uhhh noooo. I am not, why do you ask?" in a completely offended way just to see their face. It would be soo priceless. Thinking I would have to be in some sort of mood though to say that back.

I wonder what the cashier would say if I told her/him that those 10 bags of marshmallows I just bought are for my children's lunch tomorrow ;)
