Bettercream Help!

AI am making my daughters cake for her birthday this year. Mil is baking and I'm decorating. She wants to use bettercream and I'm ok with that. But I'm afraid my design won't work now. I want to do a three tier cake. Top tier will be with the swirl flowers. The middle tier will be plain with tiny purple flowers. Bottom will be horizontal ruffles. Will the bettercream hold up? And does it need to be refrigerated?

AIf it is the whipped icing, it will be okay as long as your supports are sound. As far as refrigeration, it is better if it is refrigerated but it will be okay in a relatively cool room for several hours. Either way, if you don't have the space to refrigerate, I would recommend decorating it as close to party time as possible.

There is buttercream and Bettercreme. Which one are you asking about?

ABetter creme. So the swirl flowers and ruffles will hold up?

AThey should. I just wouldn't do a lot of detail that sticks out too far on the sides of the cake.

It will be fine for the roses.  The ruffles in this picture are made of fondant not buttercream OR Better Crème.

AThe ruffles should be okay with a 104 tip. I would suggest refrigersting it before you decorate it to let the icing det on to the cake really well but I've done ruffles and such in better creme without a problem.

I've done those ruffles with buttercream and had success....just haven't worked with better creme.  

 

Also, the cakes will be frozen ahead of time so they will be cold.
