My sister-in-law and I have to make a birthday cake for the 20th of July. We are making a chocolate mayonnaise cake and want to possibly make it ahead and freeze it. Has anyone ever tried making this type of cake in advance and freezing it? I'm concerned with the mayonnaise content changing the cakes ability to be frozen..if so how far in advance would you recommend making the cake?

Thanks, birthday.gif

I doubt it would be a problem.  My chocolate cake recipe does not include mayo,  but mayo is just oil and eggs.  I freeze everything and have never had a problem.

Done it mamy times.  No problem!  Once the cake is baked the mayo changes and is incorportated into the flour the same as if you used oil or melted butter.

You can go ahead and make that cake anytime -  even today:)
