AI provided cake cutting service at a wedding reception today. It is the first time I have done so as the caterers usually do this. I usually just drop off the cake and am out of there but today I returned several hours later for the cutting as a favor to the customer. My question is this, is there a secret in getting the cake dismantled and cut quickly? There was me cutting, one assistant handing me plates and one assistant taking plates to the guests and it took the three of us about 45 minutes to disassemble and serve a four tier cake with 172 servings working as quickly as we could. There has to be some tricks in getting this done faster. My cake had four different flavors and the guests wanted the variety coming out so it necessitated alternating cutting the cake flavors. Suggestions?

I hope you are charging for your time. This is usually the caterer's responsibility... It takes practice; having servers is essential.

AI would charge $1/minute plus travel time both ways.
