Can Anyone Tell Me How To Get A Nice Blue Color For Blue Velvet Cake?

I am making my nephews wedding cake (my first one) as a gift and they requested blue velvet. I found a recipe I like (scratch) but I can't get a nice royal blue color; it's either to dark or greenish.  I use royal blue coloring with a touch of violet.  The recipe I use has 1/4 cup cocoa so it darkens it quite a bit.  As a side note; yes I did warn the couple of the side affects that blue velvet has in addition to the quests having blue teeth but they still want it.  The cake is 12', 10", 8" & 6".  They will be keeping the 6" so I made the 8" blue velvet.  I also make the 6" blue velvet just so they could re-live their wedding day to the fullest!  But I am not happy with the color and would like to remake these layers if I could get a better color.  Thanks

Are you using the Americolor gel colors? I have heard that they work the best and give the deepest colors. I am baking a wedding cake for my daughter's wedding and have bought some but haven't tried them yet. I have also used the Wilton gel paste..I think it was Navy Blue, if not, it was the deepest blue that they make, and it came out good. I had to use a lot though. For the wedding cake, I'm using Americolor Ivory though..just to be sure!

Thank you for your reply.  I usually use Wilton but didn't get a bright enough color so I tried Duff colors. Whole mixing it looked okay but baked up dark as well.  Then I realized I had used airbrush coloring...not sure I will have time to redo the cake but I will try americolor next time, heard good things about it.
