Hi I need to know if ithalian buttercream is good for hot and humid weather and I need a good recipe have problem with swissbuttercream I can bake very good but I don't have a good recipe for the topping

Hello Mollineau, if your cake is going to be indoors and in an air conditioned room then your italian buttercream should hold up. Italian and Swiss buttercream can melt if they are left outside and in sunlight. Butter begins to melt at 85-90 degrees F, I think. So I would keep it in mind if you choose to use either swiss or italian buttercream for the summer. Hope I helped. icon_smile.gif

Hi I don't have AC in my kitchen and ithalian or swiss buttercream would melt then what would be the best one for this hot weather we have a lots of baker at in this island and most people don't have AC am very good at baking for a beginner because I have been a cater part time and don't know what is a good fondant ether help am retired an love my new hobbyicon_biggrin.gif

I use 1/2 shortening (shortening with trans fat or high ratio withstands heat better) Used it for a cke that was being served in a covered metal horse riding arena in 90 degree weather. It held up great and I got tons of compliments on it...

I can really use high ratio shorting on my ithalian buttercream because I use it on my regular buttercream thank you
