I have seen many recipes on this site for a wacky cake. It seems amazing, and it will be perfect for a vegan wedding cake I have coming up. I do have one question about the recipe...can it be doubled? The biggest tier I have to bake is a 12" round and I am sure I will have to double the recipe in order to get enough batter. I know this recipe relies on the chemical reaction to make it rise, so this is why i ask. I am having a really hard time trying to figure out how I am going to bake the cake to the larger size I need and have it be tall enough AND be able to cover it in fondant and stack it. I know thats a tall order lol. Any help and advise would be WONDERFUL from anyone!!! Thank you all!! :)

I've never used a wacky recipe but I double and half my recipes all the time, and I've never had a problem. As long as the correct ingredients are in there in the correct amounts, bake at the same temperature and it should be just fine. Doubling recipes isn't nearly as tricky as halving some of them, so I don't imagine you'll have any issues :)
