Hey guys!  I just frosted a cake in ganache and covered it in fondant.  It's like 100 degrees in my house and  I dont have ac!  I Have to deliver this cake potentially tonight, possibly tomorrow am.  It has lots of decorations on pop sticks that have to be stuck into it, all made in fondant and gumpaste mix.  I have heard horror stories about putting fondant cakes in the fridge, but can i do this?  and if so, is there a method that works better than others?  Should I advise the client to refridgerate (The cake has no perishable filling, just buttercream)

AI will box it and leave it in the fridge till delivery. Usually it gets a bit sticky but with a fan on for 10-15 minutes and its dry again. All the best.

Thanks for the fan tip.. I wanted to box it but it's a very tall two tier and i coudn't figure out a box situation, even one that was constructed by me.. so I had to put it in the fridge bc it was literally melting before my eyes!  So what I will do is take it out very early in the am when it's cool in the house, and have a fan blowing on it.  I hope that will do the trick.  Thanks for the tip :D

AI just want to give a follow up on this post-- it's gotta b 85 here and super humid - last night my cake was sagging and starting to budge in the middle like the filling was melting so I had to out it in the fridge-decorations on pop sticks and all---, this morning I took it out while it was somewhat cool I'm the house (still quite warm no AC) and put a fan on it at med-low and it started sweating a little but the cake came out great!!! Not ones issue from the Wet Fondant!! Thank u for the tip!!!
