I need to make a carrot cake for Wednesday and I was wondering if any of you have a good moist recipe that I can have.

Most carrot cake recipes are the same-you just have to figure out if you like the pineapple, coconut, raisins, and nuts that most recipes have.  I personally like just carrots and maybe some toasted walnuts or pecans in the batter.  If I am not making an actual decorated carrot cake, I will caramelize spiced pecans and edge the cake with them.  It creates a deliciously spiced nut crust on the outside of the cake.  But if you have to decorate it, edging it might not be ideal.

Go to allrecipes and find one of the four star rated recipes.  There is also one on this site called Carrot Cake or Banana Cake which is good.
