I haqven't read all your replies but I have had people stand in line waiting until I can serve them a piece w/the outisde icing on it.  What's wrong w/someone who won't serve a piece of cake just because they don't happen to like lots of icing?

I know Earlene discards some of those edge peices in her serving charts too.  Just never understood that.

I would be livid if I was the bride or whoever was paying for the cake to "see the caterers in the back feasting on the waste." STOOOOOOOOP, put the knife down, back away from the cake and Google "how to cut a round wedding cake". Ugh.

No circle cutting, no waste.  I have also done it by leaving the two inch piece attached at the end if I want to keep it upright.  Then cut the end  piece when I am at the end of the row.

Your way is best, I just attached the picture that popped up when I googled "how to cut a round wedding cake". icon_smile.gif I'm a frosting lover, so it makes me sad to think of all the sugar that ended up in a trashcan...

She did actually say, "Now I am just going to discard that," as she moved the hunk over to the plate! Inconceivable!

I also noticed that chunk of hair getting clumpier and greasier in later videos, lol. She must've filmed them all in one day.

AI do have to say that there's a baker in town here who tells clients that square cakes are more expensive than round ones because to get a square shape you have to start with a round one, then cut the square one out of that. So you end up wasting a lot of cake. Durrr...

Good heavens, how stupid can some professionals be?  The baker sells cakes but doesn't know that there are square cake pans?  You can get square and rectangular at any KMart, Walmar, Target...she must know there are good quality ones available too.  Doesn't even Michaels carry square pans?

Are you SERIOUS ?!?! No .. like... for real? I can't even believe this. I would feel like I was being punked if I went to order a cake from that baker!!!!!

I'm farrrrr from a professional/commercial baker, but just having plain common sense should make a person realize how stupid that is.

Isn't it amazing that these people are actually able to RUN a BUSINESS??!!

Maybe I should consider making this a business too ... since anyone can do it.

AWow, I don't agree with her cutting methods because I am all about the cake. i don't even like 3D carved cake because I can't bear to waste delicious cake and expensive ingredients.

That said, this baker seems to run a very successful, high-end NYC bakery. And, maybe, just maybe her clients might just rather have perfect-looking slices then save a few hundred bucks on cake. Per a recent entry on her Facebook page, she just had a client who had her wedding at the St. Regis, so clearly money was not a huge issue for that bride.

Again, I don't agree with her methods, and she should not by passing her cake cutting methods off as industry standard but I can't believe how harsh people are being.

I do not think she is stupid.

I was calling costumeczars fellow baker stupid.  The one who tells her clients that square cakes are more expensive because they start with a round and get cut down to a square.  I stand my my comment to call her method stupid.  I should learn how to use quotes from other posters so there isn't misunderstanding.

 

I think Michelles method to throw away a significant portion of the cake just to get all rectangular slices is unusual, unconventional, wasteful and a number of other things.  Her reference to the industry standard slices is also significantly larger than what most of us think as the industry standard.  But then, who really gets to say what is the industry standard?  Her prices are really high so she is getting paid for the larger slices I guess.  Her video is not just going out to the  St Regis customers, but anyone searching for cake cutting info.  It would be interesting to see how the St  Regis staff cut up the cake?

I doubt that she cuts her own cakes, she delivers then leaves. I don't cut the cake myself and I have no idea how different venues cut it. But they don't throw it out like that, I do know that. Maybe someone in New York does cut it like that (I doubt it but it's possible) and they gave her bad information.

Having said that, I did remember where I saw her before, she was on that throwdown with Bobby flay show. She was very nice and extremely nervous, so if she's been reading any of this she's probably curled up in a fetal position somewhere. I seriously doubt that any of her clients' reception venues cuts the cake the way that she does in that video...the worst thing that could come of it is some bride seeing it and thinking that it's the right way to do it, then blaming us for wasting cake. But like I have to tell the brides who come in from the baker who cuts the square cakes out of round ones, that isn't how it's done. I'd tell someone who asked about it that they should ask their venue how it's cut because everyone does it differently.

I also tell brides that the round-cake-into-square baker needs to try this newfangled invention called "square cake pans."

Look at the dates on her timeline there... 

That St. Regis wedding was in Jan 2011...

Heck... The video post itself was from Feb of this year...

It doesn't look like her facebook page gets alot of attention by her...

Then again, I shouldn't talk... I haven't even bothered to get a facebook...

First, she really touched her hair then the cake?? Really?!

 

Second, why would you cut it this way and create the waste. I do like the look of all of the slices looking the same, but just because they're not the same shape when you cut them in the circular fashion, doesn't mean they're different total sizes. 

 

Not sure how I feel about this. Something to think about for sure, but I just don't know why you would ultimately waste something that was paid for. What if you went to the Bride or MOB and said, "Oh hey, by the way, we waisted ____ amount of cake to cut it properly", I'm pretty sure the cake decorator would be asked for a portion of the cost back...

The sides she cut off weren't even straight. So I don't know how she is supposed to get all even pieces when she hacks of the "waste" 
If someone cut one of my cakes like that there wouldn't be enough slices, I would never give slices that big for a wedding.
